Easy Sweet Potato Egg Casserole

A wholesome and comforting casserole made with sweet potatoes and turkey sausage, perfect for brunch or meal prep.

  • 2 large sweet potatoes, diced (about 4 cups)
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 lb uncooked turkey sausage
  • 1 tsp dried thyme
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and cube the sweet potatoes into 1-inch pieces.
  3. In a skillet, heat the olive oil over medium heat. Once hot, add the sweet potato cubes and sauté until tender, about 10-12 minutes.
  4. In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder.
  5. Gently fold the sautéed sweet potatoes and shredded cheese into the egg mixture.
  6. Grease a baking dish with oil or cooking spray.
  7. Pour the mixture into the greased baking dish and spread evenly. Bake for 30-35 minutes until set and golden on top.
  8. Let cool for 10 minutes before slicing into squares.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for later use. Can swap sweet potatoes for butternut squash or regular potatoes.
