Delicate French cookies with a smooth salted caramel filling, perfect for any occasion.

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Mix the almond flour and powdered sugar together. Stir well until you get a consistent mix.
  3. Whip the egg whites until frothy. Gradually add the granulated sugar and salt, continuing to beat until stiff peaks form.
  4. Fold the almond flour and powdered sugar mixture into the whipped egg whites gently.
  5. Pipe small circles onto the prepared baking sheet from a piping bag filled with the macaron batter.
  6. Let the piped macarons sit for 30 minutes to form a skin.
  7. Bake the macarons for 15-20 minutes in the preheated oven.
  8. Create the salted caramel filling by melting butter and mixing in brown sugar, heavy cream, vanilla, and salt.
  9. Assemble your macarons by piping salted caramel onto one macaron shell and topping it with another shell.

Notes

Store macarons in an airtight container in the refrigerator for up to a week.
