Delicious homemade focaccia bread topped with garlic and Parmesan, perfect as an appetizer or side dish.

Ingredients

  • 2 cups warm water
  • 2 tablespoons active dry yeast
  • 1 tablespoon sugar
  • 5 cups all-purpose flour
  • 1 tablespoon salt
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh rosemary or thyme (optional)
  • Coarse sea salt for sprinkling

Instructions

  1. Activate the yeast: In a bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes until frothy.
  2. Combine the dry ingredients: In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture along with the olive oil.
  3. Mix into a dough: Mix until a dough forms. Knead for about 5-7 minutes until smooth.
  4. Let it rise: Place the dough in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.
  5. Preheat the oven: Preheat your oven to 425°F (220°C).
  6. Shape the dough: Once risen, punch down the dough and spread it onto a greased baking sheet.
  7. Dimple it: Dimple the surface with your fingers.
  8. Spice it up: Mix garlic, Parmesan, and herbs, and sprinkle over the dough.
  9. Give it a rest: Allow to rest for another 20 minutes.
  10. Finish with sea salt: Sprinkle with coarse salt before baking.
  11. Bake! Bake for 20-25 minutes, or until golden brown.

Notes

For variations, consider adding chopped olives or sun-dried tomatoes to the dough. Ensure your water is warm for the yeast activation.
