A delightful combination of buffalo chicken and gooey cheese wrapped in a flaky biscuit, perfect for parties or cozy nights.

  • 2 cups cooked, shredded chicken
  • 4 oz cream cheese, softened
  • ½ cup buffalo wing sauce
  • 1 cup shredded cheddar or mozzarella cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • 2 (16.3-ounce) cans refrigerated flaky biscuit dough (yielding 16 biscuits)
  • 1 tbsp unsalted butter, melted
  • 2 tbsp ranch or blue cheese dressing, for dipping (optional)

Instructions

  1. Start by shredding 2 cups of cooked chicken breast.
  2. In a large mixing bowl, combine cream cheese, buffalo wing sauce, cheddar or mozzarella, garlic powder, onion powder, and paprika.
  3. Add shredded chicken to the cream cheese mixture and mix thoroughly.
  4. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. Flatten each biscuit into a circle about 4-5 inches in diameter.
  6. Spoon 1½ to 2 tablespoons of the buffalo chicken mixture into the center of each flattened biscuit.
  7. Gather the edges of the biscuit dough and pinch them together to enclose the filling.
  8. Roll the sealed dough ball between your palms to create a smooth bomb and place seam-side down on the baking sheet.
  9. Brush the tops of each bomb with melted butter.
  10. Bake for 18-22 minutes until golden brown on top.
  11. Let cool for about 5 minutes before serving, optionally with ranch or blue cheese dressing.

Notes

For extra flavor, use leftover rotisserie chicken and serve with a side of fresh veggies or salad.
