  • 4 ounces dark chocolate
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Whisk together the almond flour, powdered sugar, and cocoa powder until well combined.
  3. Beat the egg whites until foamy. Add cream of tartar and gradually incorporate sugar until stiff peaks form.
  4. Fold the dry ingredients into the egg whites gently.
  5. Pipe small circles onto the prepared baking sheet using a piping bag and let them rest for 30 minutes.
  6. Bake the macarons for 15-20 minutes until firm to the touch.
  7. Create the ganache by heating heavy cream and pouring it over chopped dark chocolate; stir to a smooth consistency.
  8. Assemble the macarons by pairing them and piping the ganache onto one shell before topping with another.
