  • 1 pound parsnips, cut into uniform sticks
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons maple syrup or honey/agave as a substitute
  • 1 tablespoon fresh thyme or dried thyme (one-third amount)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the parsnips into uniform sticks for even cooking.
  3. In a mixing bowl, combine parsnips with olive oil, maple syrup, thyme, salt, and pepper.
  4. Spread the coated parsnips on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, tossing halfway through, until tender and caramelized.
  6. Serve warm, garnished with extra thyme.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for later use. For additional flavor variations, add chili flakes or garlic powder.
