Comforting gyro bowls filled with succulent meatballs, refreshing tzatziki, and aromatic lemon rice that bring Mediterranean flavors to your table.

  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 egg
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cups cooked rice (preferably lemon-flavored)
  • 1 cucumber, diced
  • 1 cup yogurt
  • 2 tbsp fresh dill or mint
  • 2 tbsp lemon juice
  • 1 cup tomatoes, diced
  • 1 small red onion, sliced
  • Pita bread, for serving

Instructions

  1. Preheat the oven to 400°F (200°C). In a bowl, combine the ground beef or lamb with breadcrumbs, minced garlic, chopped onion, egg, salt, and pepper. Mix until just combined to ensure the meatballs remain tender. Shape into small meatballs and place on a baking sheet. Drizzle with olive oil and bake for 20-25 minutes until cooked through and golden brown.
  2. While the meatballs are baking, prepare the lemon rice. Cook the rice according to package instructions. Once cooked, stir in fresh lemon juice, a sprinkle of salt, and a splash of olive oil.
  3. In a medium bowl, mix diced cucumbers, yogurt, chopped dill or mint, lemon juice, salt, and pepper to create the tzatziki sauce.
  4. Assemble the bowls by starting with a generous serving of lemon rice, adding baked meatballs, then topping with diced tomatoes and sliced red onions. Add a dollop of tzatziki and serve with warm pita bread.

Notes

For extra flavor, consider adding spices like cumin or paprika to the meatball mixture. Leftovers can be stored separately for up to 3 days.
