Ingredients

  • Bread (your choice)
  • Sun-dried tomatoes
  • Fresh spinach
  • Ricotta cheese
  • Butter
  • Salt and pepper to taste

Instructions

  1. Butter it up: Spread butter on one side of each slice of bread.
  2. Create the filling: In a bowl, mix together ricotta cheese, sun-dried tomatoes, chopped spinach, salt, and pepper.
  3. Assemble your sandwich: Spread the cheese mixture on the unbuttered side of one slice of bread and top with another slice, buttered side out.
  4. Heat things up: Heat a skillet over medium heat and grill the sandwich until golden brown on both sides, about 3-4 minutes on each side.
