A rich, buttery cake topped with a velvety cream cheese filling and crunchy pistachios, perfect for gatherings and cozy nights.

  • 1 box of yellow cake mix
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 2 large eggs
  • 1 cup chopped pistachios
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix the cake mix, softened butter, and 1 egg until well combined. Press into the bottom of the prepared baking dish.
  3. Beat together the cream cheese and powdered sugar until smooth. Add the remaining eggs, vanilla extract, and salt, mixing until combined.
  4. Fold in the chopped pistachios.
  5. Pour the pistachio mixture over the crust in the baking dish.
  6. Bake for 40-45 minutes or until the center is set and slightly jiggly.
  7. Let it cool before serving.

Notes

Serve with whipped cream or vanilla ice cream. Store leftovers covered in the refrigerator for up to 4 days, or freeze slices for up to 2 months.
