A rich and elegant dessert featuring layers of dark chocolate and fresh raspberries, perfect for celebrations or cozy nights in.

Ingredients

  • 8 ounces dark chocolate, chopped
  • 2 tablespoons unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 cup fresh raspberries
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the dark chocolate and butter in a double boiler or microwave until smooth. Allow to cool slightly.
  2. In a bowl, beat the egg yolks and granulated sugar until light. Mix in the cooled chocolate.
  3. In another bowl, whip the heavy cream until soft peaks form. Fold it into the chocolate mixture gently.
  4. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form, then fold into the mixture.
  5. Carefully add the raspberries and gently mix.
  6. Pour the mousse into a cake dish and refrigerate for at least 4 hours or until set.
  7. Serve chilled and garnish with fresh raspberries.

Notes

For an extra indulgent experience, serve with a dollop of whipped cream and a scoop of sorbet. Quality chocolate is key to achieving a rich flavor.
