A rich and velvety chocolate cake topped with a glossy mirror glaze, perfect for celebrations.

  • 200g dark chocolate
  • 200g unsalted butter
  • 250g granulated sugar
  • 4 large eggs
  • 150g all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup heavy cream
  • 2 tablespoons glucose syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a round cake pan by greasing and flouring it.
  2. Melt the dark chocolate and unsalted butter together in a double boiler or microwave until smooth.
  3. Whisk the eggs and granulated sugar in a separate bowl until light and fluffy.
  4. Combine the melted chocolate mixture with the egg mixture, mixing until just combined.
  5. Fold in the sifted all-purpose flour, baking powder, and pinch of salt carefully to avoid over-mixing.
  6. Bake the batter in the prepared cake pan for 25-30 minutes until a toothpick comes out clean.
  7. Create the mirror glaze by heating heavy cream and glucose syrup, then adding chocolate until smooth.
  8. Glaze the cooled cake with the chocolate glaze, allowing it to drip down the sides.

Notes

For a shiny glaze, add more cream if necessary. Ensure eggs are at room temperature for fluffiness.
