A unique twist on the classic BLT, featuring crispy fried green tomatoes, salty bacon, and fresh lettuce, all layered between soft bread.

Ingredients

  • 4 Green tomatoes
  • 1 cup Cornmeal
  • 1 cup Flour
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 Eggs
  • 8 slices Bacon
  • 4 leaves Lettuce
  • 8 slices Bread
  • 1/2 cup Mayonnaise
  • Oil for frying

Instructions

  1. Start by slicing your green tomatoes into thick, even slices. Sprinkle with salt and black pepper.
  2. Dredge the seasoned tomato slices in flour, then dip into beaten eggs, and finally coat with cornmeal.
  3. Heat oil in a skillet over medium-high heat and fry the coated tomato slices until golden brown, about 2-3 minutes per side.
  4. While the tomatoes are frying, cook the bacon in another pan until crispy. Let it drain on paper towels.
  5. Toast the bread slices until golden brown and spread a layer of mayonnaise on each slice.
  6. Assemble the sandwich by layering crispy fried green tomatoes, bacon, and lettuce between two slices of bread.
  7. Slice the sandwich in half and serve immediately to enjoy the crunch and warmth.

Notes

For extra flavor, consider adding avocado or sharp cheddar cheese. Store fried green tomatoes separately from the assembled sandwich to maintain freshness.
