Ingredients

Scale
  • 2 pounds beef roast (chuck or rump)
  • 1 packet onion soup mix
  • 1 can beef broth (about 15 ounces)
  • 1 cup water
  • 4 to 6 hoagie rolls
  • Provolone or Swiss cheese (optional)
  • Pepper and salt to taste

Instructions

  1. Place the beef roast in the slow cooker.
  2. Sprinkle the onion soup mix generously over the beef.
  3. Pour the beef broth and water around the roast.
  4. Season the roast with pepper and salt to taste.
  5. Cover the slow cooker and let it cook on low for about 8 hours.
  6. Shred the beef gently with two forks once tender.
  7. Return the shredded beef to the slow cooker to soak up juices.
  8. Assemble the sandwiches by serving the beef on hoagie rolls.
  9. Serve with a small bowl of cooking liquid for dipping.

Notes

For added flavor, consider adding sliced mushrooms or bell peppers in the last hour. Toasting the hoagie rolls can add extra crunch.
