A warm and comforting Crockpot beef stew that combines tender beef with hearty vegetables in a savory broth.

Ingredients

  • 2 lbs beef stew meat
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced
  • 1 piece onion, diced
  • 4 cups beef broth (gluten-free if needed)
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • To taste: salt and pepper
  • 2 tbsp olive oil

Instructions

  1. Begin by heating 2 tablespoons of olive oil in a pan over medium-high heat. Season your beef stew meat generously with salt and pepper, then add it to the hot pan. Sear the beef on all sides until you achieve a beautiful brown crust, about 5 minutes.
  2. While the beef is searing, chop your potatoes, slice the carrots, and dice the onion.
  3. Once the beef is seared, transfer it to your Crockpot. Layer in the chopped vegetables—carrots, potatoes, and onions—all over the beef.
  4. Pour the 4 cups of beef broth over the meat and vegetables in the Crockpot. Sprinkle the garlic powder and dried thyme evenly over the top.
  5. Cover the Crockpot and cook on low for 8 hours or on high for 4 hours.
  6. Once the cooking time is up, taste your stew. Add additional salt and pepper if needed.
  7. Ladle the stew into bowls and enjoy!

Notes

Serve with crusty bread or over rice for extra flavor. You can store leftovers in an airtight container for up to 3 days.
