  • 4 oz cream cheese, softened
  • 1/4 cup erythritol or your preferred sweetener
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup fresh blueberries
  • Pinch of salt
  • Butter or oil for frying

Instructions

  1. Combine almond flour, cream cheese, erythritol, vanilla extract, baking powder, and salt until a dough forms.
  2. Preheat a skillet over medium heat and add butter or oil.
  3. Roll out portions of the dough into thin rectangles.
  4. Place a few blueberries at one end of each rectangle and roll it up tightly.
  5. Fry the roll-ups in the skillet until golden brown on each side, about 2-3 minutes per side.
