  • 1 cup flour
  • 1 egg, beaten
  • 2 cups panko breadcrumbs

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Season the cod fillets generously with salt and pepper.
  3. Set up your breading station with three bowls (flour, beaten egg, and panko breadcrumbs).
  4. Dredge each cod fillet in flour, then in beaten egg, and finally coat with panko breadcrumbs.
  5. Heat enough oil in a skillet over medium heat until it shimmers.
  6. Fry the cod fillets for about 3-4 minutes on each side, until golden brown.
  7. Bake the fried cod in the preheated oven for an additional 5-7 minutes.
  8. Serve with fresh lemon wedges.

Notes
