  • 8 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 1 lb chicken breast, sliced
  • 1 bell pepper, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Cajun seasoning
  • ½ cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the fettuccine pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced chicken breast and cook until browned.
  3. Add bell pepper, onion, and garlic; sauté until the vegetables are tender.
  4. Pour in the chicken broth and bring to a simmer.
  5. Stir in the heavy cream and Cajun seasoning; let it cook for a few minutes until the sauce thickens.
  6. Mix in the cooked pasta and Parmesan cheese, stirring to combine.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped parsley.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or in the microwave.
