A warm and comforting creamy chicken noodle soup, perfect for chilly evenings, featuring tender chicken, egg noodles, and a medley of vegetables in a creamy broth.

  • 2 cups cooked chicken, shredded
  • 1 cup egg noodles
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, minced garlic, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
  2. Pour in the chicken broth and bring it to a gentle boil.
  3. Add the egg noodles to the boiling broth and cook according to package instructions until al dente, about 7-10 minutes.
  4. Once the noodles are cooked, stir in the shredded chicken and heavy cream. Season with salt and pepper to taste.
  5. Serve hot, garnished with freshly chopped parsley.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut milk. You can also add peas, corn, or other vegetables for extra flavor and nutrients.
