Deliciously rich cream cheese bars that recreate the nostalgic taste of carrot cake.

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Combine grated carrots, granulated sugar, brown sugar, and eggs in a large bowl. Mix until well combined.
  3. Stir in vegetable oil and vanilla extract.
  4. Mix flour, baking powder, baking soda, salt, and cinnamon in another bowl. Gradually add to the wet mixture.
  5. Fold in the chopped walnuts or pecans if using.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Prepare the cream cheese frosting by beating cream cheese, powdered sugar, and vanilla until smooth.
  9. Spread the frosting over the cooled bars.
  10. Cut into squares and serve.

Notes

For a lighter alternative, substitute cream cheese with Greek yogurt or dairy-free cream cheese. Store leftovers in an airtight container in the refrigerator for up to 5 days.
