A delightful fusion of flavors that pays homage to classic egg rolls in a warm, comforting soup.

Ingredients

  • 1 pound ground pork
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 4 cups chicken broth
  • 4 cups coleslaw mix
  • 2 carrots, shredded
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional toppings: sesame seeds, additional green onions

Instructions

  1. Heat the sesame oil in a large pot over medium heat until fragrant.
  2. Add ground pork, ginger, and garlic; sauté until the pork is no longer pink.
  3. Pour in the chicken broth and bring to a boil.
  4. Add coleslaw mix and shredded carrots; simmer for 5 minutes.
  5. Stir in soy sauce and season with salt and pepper.
  6. Serve hot, garnished with green onions and sesame seeds if desired.

Notes

Leftover soup can be stored in an airtight container in the fridge for up to 3 days. It can also be frozen for up to 3 months.
