A quick and comforting chicken noodle soup that fills your home with delightful scents and warm nostalgia.

Ingredients

  • 2 chicken breasts, boneless and skinless
  • 8 cups low-sodium chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Sauté for 5 minutes until softened.
  3. Next, add the garlic, thyme, and parsley. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Add the chicken breasts to the pot, then reduce the heat. Let it simmer for 15-20 minutes.
  6. Once cooked, carefully remove the chicken breasts from the pot. Shred the chicken with two forks and return it to the pot.
  7. Add the egg noodles and cook for an additional 7-10 minutes until tender.
  8. Season with salt and pepper to taste. Serve hot.

Notes

For a creamier soup, stir in a splash of heavy cream or coconut milk towards the end of cooking. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
