A rich cocoa cake with fresh blackberries and creamy frosting, perfect for celebrations or any day indulgence.

  • 1 1/2 cups sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blackberries
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 23 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk together the flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
  3. Mix the buttermilk, vegetable oil, eggs, and vanilla extract in another bowl.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in the blackberries.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes or until a toothpick comes out clean. Cool in the pans for 10 minutes before transferring to wire racks.
  7. Beat the softened butter until creamy for the frosting. Gradually add powdered sugar and mix until combined. Add heavy cream and beat until fluffy.
  8. Spread frosting between the layers and over the top and sides of the cooled cakes.
  9. Slice and serve the cake, optionally garnishing with additional blackberries.

Notes

Ensure your butter is softened before making the frosting and avoid overmixing the batter for the softest crumb.
