  • 2 cups broccoli florets
  • 2 breasts chicken, cooked and diced
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the Pasta and Broccoli: In a large pot, bring salted water to a boil. Add the bowtie pasta and cook according to package instructions. When there’s about 2 minutes left, add the broccoli florets. Reserve ½ cup of pasta water, then drain.
  2. Create the Cowboy Butter Sauce: Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Squeeze in the Citrus: Zest the lemon into the skillet, then add lemon juice and a pinch of salt and pepper. Stir to create a sauce.
  4. Combine the Ingredients: Add the drained pasta and broccoli to the skillet. Toss until well coated in the sauce, adding reserved pasta water if needed.
  5. Add Chicken: Gently fold in the diced chicken until evenly distributed and heated through.
  6. Serve and Garnish: Plate the dish and sprinkle with Parmesan cheese if desired. Enjoy!

Notes

For added flavor, consider roasting the broccoli instead of boiling. This recipe can be made vegetarian by substituting chicken with chickpeas.
