1 large head romaine lettuce, chopped
1 1/2 cups cherry tomatoes, halved
6 slices bacon, cooked and crumbled
2–3 green onions, thinly sliced
1 cup cottage cheese
2 tablespoons milk or water
1 tablespoon lemon juice or white vinegar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried dill
1/2 teaspoon dried parsley
Salt, to taste
Black pepper, to taste
Instructions
In a blender or food processor, combine the cottage cheese, milk or water, lemon juice, garlic powder, onion powder, dill, parsley, salt, and black pepper. Blend until smooth and creamy. Taste and adjust seasoning if needed.
In a large mixing bowl, add the chopped romaine lettuce.
Sprinkle in the halved cherry tomatoes and thinly sliced green onions.
Toss in the crumbled bacon.
Pour the creamy dressing over the salad ingredients and toss gently until evenly coated.
Serve immediately or chill briefly in the fridge before serving.
Notes
For added protein, pair with grilled chicken or salmon. Store leftovers in an airtight container for up to 24 hours.
