A delicious and protein-packed breakfast combining creamy cottage cheese, eggs, and a spicy kick from Sriracha.

Ingredients

  • 2 slices of whole grain bread
  • 1 cup cottage cheese
  • 2 eggs
  • Sriracha sauce to taste
  • Salt and pepper to taste
  • Chopped chives or green onions (optional, for garnish)

Instructions

  1. Toast the bread slices to your preference until they’re golden and crisp.
  2. Cook the eggs in a non-stick skillet over medium heat, scrambling gently or frying sunny-side up.
  3. Spread the cottage cheese evenly across each slice of toast.
  4. Add the cooked eggs right on top of the cottage cheese.
  5. Drizzle Sriracha sauce over the eggs according to your spice preference.
  6. Season with salt and pepper to elevate the flavors.
  7. Garnish with chopped chives or green onions if desired and serve immediately.

Notes

Best enjoyed fresh, but leftover components can be stored separately in the fridge for up to 2 days.
