Delicious and versatile egg bites made with cottage cheese, perfect for any meal of the day.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (your choice)
  • 1/2 cup chopped vegetables (e.g., spinach, bell peppers, onions)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or oil.
  2. In a mixing bowl, whisk together the cottage cheese and eggs until smooth.
  3. Stir in the shredded cheese, chopped vegetables, salt, and pepper.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake in the preheated oven for 20-25 minutes, or until the bites are set and lightly golden on top.
  6. Let them cool for a few minutes before removing from the tin. Serve warm or store in the refrigerator for later.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 4 days. They can also be frozen for quick breakfasts later.
