  • 1/2 cup shredded cheese (mozzarella or cheddar)
  • 2 large eggs
  • 1/2 cup almond flour or any flour of choice
  • 1/2 tsp baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat your waffle maker.
  2. Combine the cottage cheese, shredded cheese, eggs, almond flour, baking powder, salt, and pepper in a mixing bowl and whisk until smooth.
  3. Prepare the waffle maker with cooking spray.
  4. Pour about 1/4 to 1/3 of the batter into the waffle maker.
  5. Cook for 3-5 minutes until golden brown and crispy.
  6. Serve warm with your favorite toppings.
