A delightful twist on cloud bread, this version is fluffy, light, and filled with juicy blueberries, perfect for breakfast or a snack.

  • 3 large eggs
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 tsp salt
  • Sweetener to taste (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine 1 cup of cottage cheese with 3 large eggs in a mixing bowl, blending until smooth.
  3. Add 1/2 cup of almond flour, 1 tsp of baking powder, and 1/4 tsp of salt to the mixture. Stir gently until just combined.
  4. Fold in 1/2 cup of blueberries gently.
  5. Scoop the batter onto the prepared baking sheet, forming round shapes.
