Delicious and healthy muffins made with cottage cheese and ripe bananas, perfect for breakfast or snacks.

Ingredients

  • 1 cup cottage cheese
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray it with cooking spray.
  2. Combine the cottage cheese, mashed bananas, eggs, and vanilla extract in a mixing bowl. Mix until well blended.
  3. Whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt in another bowl.
  4. Mix the dry ingredients into the wet ingredients, stirring until just combined.
  5. Add chocolate chips or nuts if desired.
  6. Fill each muffin cup about three-quarters full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool for a few minutes before transferring the muffins to a wire rack.

Notes

Store leftover muffins in an airtight container for up to three days or freeze for up to three months. Use overripe bananas for maximum sweetness.
