Delightful coffee and chocolate macarons with a smooth ganache filling, inspired by Parisian cafes.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon instant coffee granules
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate, chopped
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Whisk together the almond flour, powdered sugar, cocoa powder, and instant coffee granules.
  3. Beat the egg whites and salt until soft peaks form; gradually add granulated sugar until stiff peaks form.
  4. Fold the dry ingredients into the meringue gently.
  5. Pipe small circles on the prepared baking sheets and let sit for 30 minutes to 1 hour.
  6. Bake for 15-20 minutes, rotating trays halfway through.
  7. Heat heavy cream until just boiling, then pour over chopped chocolate to make ganache.
  8. Assemble macarons by pairing them and piping ganache between two shells.
