Delicious and buttery cookies infused with rich coffee flavor, perfect for any occasion.

Ingredients

  • 2 ½ cups (300g) all-purpose flour, sifted
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 2 tablespoons very strong brewed coffee or espresso, cooled completely
  • 1 tablespoon instant espresso powder or instant coffee powder, dissolved in 1 teaspoon hot water
  • 1 cup (120g) powdered sugar, sifted (optional, for glaze)
  • 2 tablespoons very strong brewed coffee or espresso, cooled (optional, for glaze)
  • ¼ teaspoon vanilla extract (optional, for glaze)

Instructions

  1. Combine dry ingredients in a bowl and set aside.
  2. Dissolve instant espresso powder in hot water and let cool.
  3. Cream together butter and sugar until light and fluffy.
  4. Add egg, egg yolk, and vanilla, mixing well.
  5. Incorporate brewed coffee and dissolved espresso into the mixture.
  6. Gradually mix in the dry ingredients until just combined.
  7. Chill the dough for at least 1-2 hours.
  8. Preheat oven to 350°F (175°C) and prepare baking sheets.
  9. Shape cookies using preferred method and bake for 10-14 minutes.
  10. Let cool before glazing with optional coffee glaze.

Notes

Optional: Add chocolate chips or nuts for customization. Store cookies in an airtight container for up to a week.
