A heartwarming and refreshing dip made with black beans, sweet corn, and vibrant vegetables, perfect for gatherings and parties.

  • 1 can (400 g) black-eyed peas, drained
  • 1 1/2 cups corn kernels
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, chopped
  • 2 tomatoes, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Gather and Drain the Beans: In a large bowl, combine the drained black beans and black-eyed peas.
  2. Add the Colorful Veggies: Next, add the corn, diced red and green bell peppers, chopped red onion, diced tomatoes, and cilantro to the bowl.
  3. Whisk Together the Dressing: In a separate bowl, whisk together the olive oil, lime juice, red wine vinegar, sugar, salt, and pepper until well combined.
  4. Mix and Toss: Pour the dressing over the bean and vegetable mixture and toss everything thoroughly.
  5. Chill and Enhance the Flavor: Refrigerate for at least 1 hour before serving.
