A delightful marriage of classic banana bread and swirls of cinnamon sugar, perfect for breakfast or a sweet snack.

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup icing (optional for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter to blend seamlessly with the mashed bananas.
  4. Mix in the baking soda and salt to enhance the flavor and create the perfect rise.
  5. Add the sugar, egg, and vanilla extract; mix well until everything is combined.
  6. Gently stir in the flour until just incorporated, being careful not to overmix.
  7. Combine the ground cinnamon and brown sugar to create that sweet swirl.
  8. Pour half of the banana bread batter into the prepared pan, sprinkle half of the cinnamon sugar mixture on top, then pour the remaining batter and finish with the remaining cinnamon sugar.
  9. Swirl with a knife if desired, then bake for 60-70 minutes or until a toothpick comes out clean.
  10. Cool and drizzle with icing if desired, adding that perfect finishing touch.

Notes

Store any leftovers in an airtight container at room temperature for up to three days, or in the fridge for up to a week. You can also slice and freeze the bread for up to three months.
