A delightful blend of chocolate and spinach, these muffins are both indulgent and nutritious.

Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the vegetable oil, sugar, brown sugar, eggs, and vanilla extract until well combined.
  4. Stir in the chopped spinach, folding it into your wet mixture.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips if using.
  7. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  8. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  9. Let them cool in the tin for a few minutes before transferring them to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days. Refrigerate for a week or freeze for up to 3 months.
