  • 2 chicken breasts
  • 1 cup chipotle ranch dressing
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn
  • 1 cup shredded cheese
  • 1 cup shredded lettuce
  • 1 diced tomato
  • Salt and pepper to taste

Instructions

  1. Heat the grill by preheating it to medium-high heat.
  2. Marinate the chicken breasts in chipotle ranch dressing for at least 30 minutes.
  3. Grill the chicken for 6-7 minutes per side or until fully cooked.
  4. Rest the chicken for about 5 minutes after grilling.
  5. Slice the grilled chicken into thin strips.
  6. Layer the fillings inside a large flour tortilla starting with rice, then adding beans, corn, cheese, lettuce, tomatoes, and chicken.
  7. Roll the burrito tightly, tucking in the sides as you go.
  8. Serve with extra chipotle ranch dressing on the side for dipping.
