A comforting and flavorful dish featuring marinated chicken thighs and creamy smoked Gouda mashed potatoes.

  • 4 chicken thighs
  • 2 tablespoons chipotle honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup smoked gouda cheese, shredded
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together the chipotle honey, olive oil, salt, and pepper.
  3. Coat the chicken thighs thoroughly in the marinade.
  4. Place them in a baking dish and bake for about 25-30 minutes.
  5. Boil the cubed potatoes in salted water until tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot.
  7. Add the smoked Gouda, milk, and butter, and mash until smooth.
  8. Plate the chicken thighs alongside a scoop of smoked Gouda mashed potatoes.

Notes

For deeper flavor, marinate the chicken for an hour or overnight. Use a meat thermometer for checking chicken doneness.
