Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 medium beets, cooked and diced
  • 1 cup feta cheese, crumbled
  • 1/4 medium red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Wash and dice the beets.
  2. Prep the chickpeas.
  3. Slice the onion.
  4. Mix the ingredients in a large bowl.
  5. Dress and season the salad.
