  • 3 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 tablespoon ground coriander
  • 4 cloves garlic (minced, for marinade)
  • 3 tablespoons fresh lemon juice (about 1 lemon)
  • 1 cup plain Greek yogurt
  • 3 tablespoons mayonnaise
  • 4 cloves garlic (finely grated or minced, for sauce)
  • 1 tablespoon fresh lemon juice (for sauce)
  • 1/2 teaspoon salt (for sauce)

Instructions

  1. Marinate the Chicken: In a large mixing bowl, combine olive oil, ground cumin, paprika, turmeric, cinnamon, black pepper, salt, ground coriander, minced garlic, and lemon juice. Whisk until fully integrated. Add the chicken thighs, ensuring they are well-coated in the marinade. Cover and refrigerate for at least one hour, or overnight for a deeper flavor.
  2. Prepare the Garlic Sauce: While the chicken marinates, prepare the garlic sauce by blending Greek yogurt, mayonnaise, finely grated garlic, lemon juice, and salt in a bowl. Mix until smooth and creamy. Set aside to let the flavors meld.
  3. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, until the chicken is cooked through and has those lovely charred edges. Ensure the internal temperature is at least 165°F (75°C). Let the chicken rest for a few minutes after cooking.
  4. Serve: Slice the chicken into strips and arrange it on a serving platter. Drizzle with the creamy garlic sauce and serve with warm pita, fresh vegetables, or a big salad on the side.

Notes

For a quick dinner, marinate the chicken the night before to save time. Optionally, add cayenne pepper to the marinade for a spicy kick.
