  • 1/2 teaspoon cayenne pepper

  • Pita bread, for serving
  • Sliced vegetables (lettuce, tomato, cucumber, onion), for serving
  • 1 cup garlic sauce (store-bought or homemade)

Instructions

  1. Mix the flavorful marinade: In a bowl, combine minced garlic, ground cumin, coriander, paprika, turmeric, cinnamon, cayenne, salt, pepper, olive oil, and lemon juice. Stir well until all the spices are integrated into the olive oil, creating a luscious marinade.
  2. Marinate the chicken: Add the chicken thighs to the marinade, making sure they’re well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour—or overnight for the best flavor infusion.
  3. Preheat the grill or skillet: Get your grill or skillet ready by preheating it over medium-high heat.
  4. Cook the marinated chicken: Once the grill is hot, add the marinated chicken. Cook for about 5-7 minutes per side or until the chicken is fully cooked and has beautiful char marks.
  5. Rest the chicken: After cooking, remove the chicken from the heat and let it rest for a few minutes.
  6. Serve and enjoy: Slice the rested chicken into strips and serve it warm in fluffy pita bread.

Notes

For maximum flavor, marinate the chicken overnight. Adjust the cayenne pepper based on your spice tolerance. You can also bake the chicken in the oven at 400°F for about 25-30 minutes.
