A hearty and vibrant Chicken Fajita Rice Bowl, perfect for quick weeknight dinners or leisurely weekends, offering all the flavor of traditional fajitas in a nourishing bowl.

  • 1 lb chicken breast, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cups cooked rice
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a pan, heat the olive oil over medium heat.
  2. Add the sliced chicken to the pan, stirring occasionally, and cook until browned, about 5-7 minutes.
  3. Once the chicken is golden, toss in the sliced bell pepper and onion and sauté for about 4-5 minutes until tender.
  4. Sprinkle the fajita seasoning over the chicken and veggies, stirring for an additional 2 minutes.
