A vibrant and flavorful Chicken, Broccoli & Mushroom Stir-Fry that’s easy to make and perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups broccoli florets
  • 1 cup mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the olive oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add in the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  3. Toss in the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the broccoli florets and mushrooms, cooking for another 3-4 minutes until the veggies are tender but still crisp.
  5. Pour in the soy sauce and oyster sauce, tossing everything to combine.
  6. Taste and season with salt and pepper to suit your preference.
  7. Spoon the stir-fry over cooked rice or noodles and enjoy!

Notes

For a spicy kick, add sliced chili peppers or Sriracha when incorporating the sauces.
