  • 4 medium potatoes (2 lbs)
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Optional toppings: sour cream, salsa, or guacamole

Instructions

  1. Peel and chop the potatoes into small pieces. Boil them in a pot of salted water for 15-20 minutes until fork-tender. Drain the potatoes.
  2. In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Stir in garlic powder, chili powder, salt, and pepper to season.
  3. In a bowl, mash the boiled potatoes until smooth. Mix in sautéed onions and shredded cheese until combined.
  4. Take a large tortilla and place a generous scoop of the potato filling in the center. Fold in the sides and roll tightly to make a burrito.
  5. In the skillet, heat more oil if needed. Place the burritos seam-side down and cook until golden brown, about 2-3 minutes per side.
  6. Serve warm with optional toppings like sour cream, salsa, or guacamole.
