Delightful and fluffy egg bites made with cottage cheese, cheeses, and your favorite vegetables for a comforting meal.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped vegetables (spinach, bell peppers, or onions)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin with cooking spray or oil.
  3. Whisk together the cottage cheese and eggs until smooth.
  4. Mix in the cheese and chopped vegetables gently.
  5. Season with salt and pepper to taste.
  6. Fill the muffin tin cups about ¾ full with the mixture.
  7. Bake for 20-25 minutes until set and lightly golden.
