A comforting and hearty enchilada recipe featuring ground beef, topped with a creamy white sauce and melted cheese.

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup milk
  • 10 flour tortillas
  • 1 can (4 oz) diced green chilies
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat a drizzle of olive oil in a skillet over medium heat. Add the diced onions and cook until soft.
  3. Add the ground beef to the skillet, breaking it up as it cooks until browned, draining excess fat.
  4. Stir in the taco seasoning, diced green chilies, salt, and pepper until combined.
  5. Whisk together the cream of chicken soup, sour cream, and milk in a separate bowl.
  6. Spread a small amount of the creamy sauce in the bottom of a baking dish.
  7. Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in the dish.
  8. Pour the remaining sauce over the enchiladas and top with shredded cheese.
  9. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
  10. Serve after letting it rest for a few minutes.
