Delicate macarons infused with chai spices, perfect for a cozy afternoon treat.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cup powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon chai spice mix
  • 1/4 teaspoon salt
  • Buttercream or filling of choice

Instructions

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Mix together the almond flour and powdered sugar in a medium bowl.
  3. Beat the egg whites and salt with an electric mixer until foamy. Gradually add granulated sugar and beat until stiff peaks form.
  4. Mix in the vanilla extract and chai spice mix.
  5. Fold the almond flour mixture into the egg white mixture gently.
  6. Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheet.
  7. Let the piped macarons rest for about 30 minutes until shells form a thin skin.
  8. Bake for 15-20 minutes until they lift off the parchment easily.
  9. Cool completely, then fill with your choice of filling.

Notes

For best results, age egg whites overnight and sift almond flour and powdered sugar twice.
