Delicate Chai Macarons infused with the aromatic spices of chai, offering a crispy shell and a moist interior.

  • 1 cup almond flour
  • 1 3/4 cup powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp vanilla extract
  • 1/4 tsp cream of tartar
  • Buttercream or filling of choice

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Sift together the almond flour, powdered sugar, and spices.
  3. Whip the egg whites and cream of tartar until frothy, then gradually add granulated sugar until stiff peaks form.
  4. Fold the almond mixture into the whipped egg whites until fully incorporated.
  5. Pipe small circles onto the prepared baking sheet, leaving space between each.
  6. Allow the piped macarons to rest at room temperature for 30-60 minutes until they form a skin.
  7. Bake for 15-20 minutes, rotating the baking sheet halfway if needed.
  8. Cool and assemble the macarons with buttercream or filling.
