A vibrant, hearty Cajun dish that combines chicken, sausage, and shrimp with aromatic vegetables and spices.

Ingredients

  • 1 lb chicken breast or thighs, diced
  • 12 oz beef sausage, sliced
  • 1/2 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add in the diced chicken and sliced beef sausage. Sauté until browned.
  3. Stir in the diced onion, bell pepper, celery, and minced garlic. Sauté until softened, about 3-5 minutes.
  4. Add the long-grain rice to the pot, stirring to coat in the oils.
  5. Pour in the chicken broth and the can of diced tomatoes (juice included).
  6. Sprinkle in the Cajun seasoning, smoked paprika, dried thyme, and black pepper. Stir to combine.
  7. Raise the heat and let the mixture come to a boil.
  8. Reduce the heat to low, cover, and simmer for 20-25 minutes.
  9. Fold in the shrimp, cover again, and let sit for an additional 5 minutes.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of broth.
