  • 2 pounds cooked and cleaned crab
  • 6 large eggs
  • 1/4 cup Cajun seasoning
  • 1 lemon, juiced
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 4 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the Eggs: Bring a large pot of salted water to a boil. Add the eggs and boil for about 10 minutes. Once they’re done, transfer them to a bowl of cold water to cool. Once cooled, peel the eggs.
  2. Sauté the Aromatics: In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until translucent and fragrant.
  3. Infuse the Crab with Flavor: Add the cooked crab to the skillet, followed by Cajun seasoning and lemon juice. Stir to coat the crab in the spices.
  4. Combine with the Eggs: Gently add the boiled, peeled eggs to the skillet, covering them in the sauce. Cook together for another 2-3 minutes.
  5. Season to Perfection: Before serving, season with salt and pepper to taste.
  6. Serve and Garnish: Serve the dish hot, garnished with fresh parsley.
