A nostalgic yet modern twist on the classic gooey butter cake, featuring a buttery base and a rich, creamy pistachio topping.

  • 1 box yellow cake mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg
  • 1 cup powdered sugar
  • 1 (8 oz) package cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C). Grab a 9×13 inch baking dish and give it a good greasing.
  2. In a mixing bowl, combine the cake mix, melted butter, and 1 egg. Mix until everything is well blended and smooth.
  3. Press this into the bottom of the prepared baking dish creating a solid base.
  4. In a separate bowl, beat together the softened cream cheese, powdered sugar, and 2 eggs, along with the vanilla extract until smooth.
  5. Take the chopped pistachios and gently fold them into the cream cheese mixture.
  6. Pour the cream cheese mixture over the cake layer in the baking dish and spread evenly.
  7. Pop it into the oven and bake for 40-45 minutes, or until the top is golden and set.
  8. Once baked, allow to cool before cutting into squares.

Notes

Serve warm or at room temperature. Pair with vanilla ice cream or fresh berries for added flavor.
