A hearty and exciting bowl combining the smokiness of buffalo chicken with crispy potatoes and tender brussels sprouts.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup buffalo sauce
  • 4 medium potatoes, cubed
  • 2 cups brussels sprouts, shaved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Chopped green onions, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the diced chicken with buffalo sauce until well coated.
  3. On a baking sheet, spread the cubed potatoes and drizzle with olive oil, seasoning with salt, pepper, garlic powder, and onion powder. Toss to coat.
  4. Bake the potatoes for 25-30 minutes or until crispy and golden, flipping halfway through.
  5. In a skillet over medium heat, add the buffalo chicken and cook for about 5-7 minutes until cooked through.
  6. Add the shaved brussels sprouts to the skillet and sauté until tender.
  7. In a bowl, layer crispy potatoes, buffalo chicken, and sautéed brussels sprouts.
  8. Garnish with chopped green onions and additional buffalo sauce if desired. Serve hot and enjoy!

Notes

If you want more crunch, feel free to air-fry the potatoes! For a milder sauce, try a blend of buffalo and ranch.
